Yes u can. It connects to the watch via ANT+. When using the HRM Pro (Plus) in sync-afterwards mode, the watch will explicitly ask if it has to download the data, so you can't do this accidentally. Just pair/unpair the HRM to the watches as needed and record it during the activity. Thank you!
